Cùmaro comes from the Greek komaros which means strawberry tree, an evergreen shrub typical of the woods of Monte Conero, where the grapes for this wine grow. Thanks to a very strict selection of grapes in the field and the use of modern winemaking and aging techniques, it knows how to enhance a territory close to the sea and very calcareous and a grape variety of character like Montepulciano. With the 2004 vintage it won the Conero Riserva Controlled and Guaranteed Designation of Origin.

Packaging: 1 bottle of 0.75 lt Grape variety: 100% Montepulciano Production area: Marche, Conero The Vineyard: The vineyard from which Cúmaro is born is located in the municipality of Osimo (AN), in the bottom of San Lorenzo. It is south-east facing, on a hill that is about 150-200 meters above sea level. The soil, which dates back to formations of the marine Plio-Pleistocene, is deep, clayey, sometimes sandy, calcareous with a fair presence of skeleton. The yield, which is contained through very short pruning and targeted thinning, can vary according to the seasons, from 60 to 80 quintals per hectare. Harvest: The harvest is done by hand, with the grapes harvested and transported in crates. Normally it takes place in October, when the Montepulciano grapes, a rather late grape variety, have reached an excellent and advanced degree of phenolic ripeness. Vinification: The destemmed and slightly pressed grapes are fermented at 27-29°C in steel tanks for 12-14 days on indigenous yeasts. Subsequently, the wine goes to the malolactic fermentation phase, at the end of which it is aged in 225 lt oak barriques for a period of 12-14 months. After bottling, the Cùmaro is further aged, in a thermocontrolled environment, for about 6-8 months. Serving glass: Large glass, with a rather large body to allow the right oxygenation of red wines, long aged in the bottle, and with tannins that have already taken on a softer character, developing complex and tertiary aromas that will be well concentrated in the narrowest opening. Pairings: Great companion for blooded red meats, feathered game and aged cheeses. Serving temperature: 16-18 °C
