"CAPOCCIA" CILIEGIOLO MAREMMA DOC 2021 - 1 bottle of 0.75 lt
Bright ruby red wine, the nose offers pleasant fruity scents with hints of cherries and berries combined with floral references. On the palate it is fruity, with an excellent structure, dry, enjoyable and well balanced thanks to the elegant tannins and the fresh note. Final of excellent persistence with fruity memories.
Grapes: Ciliegiolo 85% - Alicante 15%
Training system: Guyot
Plant density: 3500 / 4500 vines / hectare
Soil type: rich in silt
Altitude: variable between 100 and 300 meters above sea level
Age of the vines: 10 - 15 years
Harvest period: mid-September
Method of fermentation: grapes harvested at perfect phenolic ripeness and protected with the use of carbonic snow. Hot maceration (35°C) for 12 hours; fermentation follows at controlled temperature (max 27°C). Racking off after 4 days of fermentation with the skins. Aging on the fine lees until the malolactic fermentation takes place (November).
Maturation: in steel for 3 months with the fine lees.
Refinement: in the bottle for at least 3 months.
Aging capacity: good from a young age, it gives its best within 2 years of the harvest.
Pairing: perfect with first courses with meat-based sauces and red meat main courses.
Service temperature: 16°C
Ideal glass: a large Bordeaux type goblet.
"ROGGIANO" MORELLINO DI SCANSANO DOCG 2021- 1 bottle of 0.75 lt
Full ruby red wine, rich in color, enlivened by purple reflections. The olfactory bouquet is characterized by character and pleasantness, breadth and depth, with fruity, floral and spicy notes suffused with hints of undergrowth. The enjoyment of the taste does not lack anything in terms of persistence and balance: the tannins are well present but elegant, subtle, balanced, together with the freshness, by a fruity roundness.
Grapes: Sangiovese 95% - Alicante 5%
Training system: spurred cordon and guyot
Plant density: 3500 / 4500 vines / hectare
Soil type: variable, mainly sandy-silty
Altitude: variable between 100 and 300 meters above sea level
Age of the vineyards: 10 - 20 years
Harvest period: end of September
Method of fermentation: grapes harvested at perfect phenolic ripeness and protected with the use of carbonic snow. "SYCMORO" MORELLINO DI SCANSANO RESERVE DOCG 2017 - 1 bottle of 0.75 lt
Concentrated ruby red wine, the nose offers great pleasure with the sweet spicy and fruity notes of cherry, berries, cinnamon and vanilla. Full, dry palate, with powerful yet elegant tannins, balanced by alcoholic warmth and softness. Balanced and long-lasting taste with fruity and spicy returns.
Grapes: 100% Sangiovese
Training system: spurred cordon
Plant density: 3500 vines / hectare
Soil type: silty sandstone, clayey below 1m depth.
Altitude: 300 meters above sea level
Age of the vineyards: single vineyard over 30 years of age.
Harvest period: first week of October.
Method of fermentation: harvested at perfect phenolic maturation. The grapes are macerated at 35°C for 12 hours; followed by fermentation at controlled temperature (max 29°C) and post-fermentation maceration on the skins for a total of 12 days from the start of fermentation.
Malolactic fermentation occurs naturally a few days after racking.
Maturation: maturation in 225 l French oak barriques (60% first passage, 40% second passage) for 15 months; a short passage in steel follows.
Refinement: 18 months in the bottle.
Aging capacity: Sicomoro is a Morellino with a great structure, to be drunk preferably 5-10 years after the harvest.
Pairing: with roasts and braised meats, succulent meat dishes, aged cheeses.
Service temperature: 18°C
