“Eimi” from the Greek “Io sono” comes from the selection of Nero d"Avola grapes and a careful vinification in red. The wines, aged in barrique, have an intense violet color, aromas of aromatic herbs and spices in particular of black pepper and chocolate, the taste is full, velvety and very persistent.
Packaging: 3 bottles 0,75 lt Type: Red Wine D.O.C. Sicily. Grape variety: Nero d'Avola 100% Colour: Violaceous very intense. Smell: Notes of aromatic herbs, very spicy in particular of black pepper. Taste: full-bodied, elegant and persistent. Vineyards: Centro Sicilia, c.da Cusatino agro di Caltanissetta at 580 mt (a.s.l.) in free-clay soils of limestone nature. Time and method of harvesting: Second decade of October strictly by hand. Production per ha: 80 q.li. Vinification and maceration: In red in stainless steel tanks at controlled temperature for 15 days at 25°C. Storage: In steel tanks at a controlled temperature of 15° C. Aging in wood: 12 months in new barriques and second pass. Refinement in bottle: 6 months Conservation Bottled wine: 16° C. Alcohol content: 15% vol. Serving temperature: 18° C. Pairing: Red meats and aged cheeses.
