The recipe of the Principality: Pumpkin risotto Ingredients for 4 people: 350 g of 'organic' Roma rice, 3 soup spoons of extra virgin olive oil, 1 small onion, 200 g of pumpkin, peeled and seeded and cut into cubes, salt, pepper, 2 liters of vegetable broth, 1 knob of butter, 3 tablespoons of grated cheese (Grana Padano or Parmigiano Reggiano). Preparation: In a shallow pan (10-12cm) with a thick bottom, simmer the very finely chopped onion in oil over a low heat. Add the pumpkin and a few spoonfuls of boiling broth. Cover and cook for 10 minutes. Pour in the rice, toast it for 4-5 minutes and cover it with boiling broth, adding a ladle at a time as it is consumed. Add salt and pepper, stir the rice occasionally with a wooden spoon and cook it uncovered over a medium heat. Once cooked (12-14 minutes), turn off the heat and stir in the grated cheese and knob of butter.
