Type japonica, "long A" group, Carnaroli is the most prestigious variety of Italian rice, used without regional distinctions. Large grain with a high percentage of amylose which ensures low stickiness and excellent cooking resistance, qualities that make it the ideal ingredient for risottos and salads.

La Ricetta del Principato: Risotto al radicchio rosso Ingredienti per 4 persone: 250 g di Riso Carnaroli, 200 g di radicchio rosso, 50 g di midollo di bue, 50 g di porri, 30 g di burro, 40 g di formaggio grattugiato (Grana Padano o Parmigiano Reggiano), 1 litro di brodo, 50 g di olio extra vergine di oliva, 25 cl di birra. Preparazione: fare un fondo per il risotto con metà dei porri in 20 g di olio; tostare il riso, bagnate con la birra, aggiungere il brodo e a metà cottura aggiungere il radicchio, che avrete stufato nel rimanente olio con porro e midollo di bue. A cottura ultimata, mantecare con burro e formaggio grattugiato.
