Light color, liquid physical state, light and delicate odor and taste. Acacia honey is attributed to remarkable therapeutic properties, in particular its anti-inflammatory and calming action is known, antiseptic (prevents and fights infections) and against stomach acid. In cosmetics it has a soothing, decongestant and astringent function on the pores on the skin. The main characteristic of this type of honey is the high fructose content, which is the basis of the scarce tendency to crystallize and the high sweetening power.

È ideale per sciroppare o candire la frutta, ma anche con gli ortaggi. Può essere utilizzato negli impasti per dolci, pane e per preparare macedonie. Si abbina perfettamente ai formaggi freschi, ma anche alle ricotte stagionate e ai formaggi erborinati a bassa stagionatura come il Gorgonzola, Provolone e Pecorino Romano.
