Clementino - Dry Vermouth - White Aperitif is an elixir of other times. It recalls the ancient medicamentous wines of the turn of the century that marked the influence of the first nineteenth-century Italian cocktails. It is a fine citrus essence with spices and essential oils from all over the world. It originates from a secret recipe by alchemist Baldo Baldinini, signed Tenuta Saiano. In one sip it joins the past and the future. It focuses in a sober trastullo... from aperitif to sumptuous entertainment, so... timeless.This vermuth is a toast to Clement XIV, the Santarcangiolese pope who dedicated himself — on the advice of the doctor — to the game of billiards and to mount on horseback in the moments of trastullo. Clementino was born from the idea of celebrating the Romagna vermouths that since the beginning of the century and until the 70's were drunk right in Santarcangelo, in the centre, in the town cafe. It was the “cross” aperitif”, because it united everyone at the same time!In the composition of this elixir all the elements are expertly dosed to enhance the bitter vocation that determines its aromatic, citrus and the sugar residue of 12%. The basic wine that structures Clementino is a white From here the vermouth is born with the mixture of essential oils, of different alchemia of wormwood and ancient precious spices such as myrrh with notes of walnut muscat. The lanceolate leaf is the symbol of our estate, a constant presence of wild and uncontaminated nature that extends over the whole hill. It is for us like the hand of the tree, the living presence of the wind, the tangible sign of each season. Tenuta Saiano farm originates from the desire to convey to the most priceless value of the link between food and land, through the promotion of its fruits and the enhancement of the landscape. We raise animals, follow their natural biological cycle, let them grow in a semi-wild state, in perfect symbiosis with the habitat of the forest oasis. There are ten hectares of vineyards that run from the hill towards the valley, on Mount Scorticata, with spurred cordon rows, interspersed here and there by an oak tree or a clearing with some fruit trees. At the beginning of each row, we plant a rose, like sentinel of the vineyard, to understand every imperceptible change, because if the rose immediately speaks, the vineyard does not, it grows in and in silence.
