The “Selection” line represents the perfect union between grape variety, territory
and microclimate. The winemaker carefully chooses the best grapes and varieties that
better adapt to the land, giving life to typical wines, of great character
and complexity. Sauvignon Mock combines citrus and floral notes with a
strong minerality and a remarkable structure.
Packaging: 3 bottles of 0.75 lt Variety: Sauvignon Blanc Production area: steep slopes around Bolzano, at 500 m a.s.l. Harvest: September. Vinification: soft pressing of the selected grapes, fermentation at a controlled temperature and maturation in steel tanks to maintain the freshness of the wine. Colour: straw yellow with greenish reflections. Bouquet: tomato leaves and nettles, peppers greens, mint, fruity hints of peach yellow and pink grapefruit, acacia and elderberry, elderberry. When aged, it develops interesting mineral notes and nuances of flint. Taste: fruity taste with a delicate acidity and balanced, good structure and aftertaste persistent. Pairing: excellent as an aperitif, accompanied by dishes with asparagus, fish dishes, light dishes or vegetarians. Ideal for herbal cooking aromatic. Serving temperature: 10-12° C Alcohol: 14% vol.
