Quality sparkling wine, traditional Classic method, with an intense straw yellow color, touched by golden reflections. On the palate it is almost explosive of a decisive and pungent freshness. The fruity and sweet notes slowly fade towards a dominant minerality that leaves the mouth savory and almost salty. Body of strong character and personality. Excellent persistence.

Grapes: Durella for 80 -85% and remaining Incrocio Manzoni. Durella is an ancient and native vine of the Veneto region, cultivated on soils rich in minerality. Production area: The hills to the North East of Verona, in the area of the Lessini Mountains. System of implantation: short veronese tent. Soil: of volcanic originVinification: soft pressing with a temperature of 10-12° C. The first fermentation takes place in thermo-controlled tanks with temperature around 15-18° C. Average fermentation time in tanks: 20 days. Surge with its own yeasts in April. Maturation: on its lees in bottle, not less than 30 months. Remuage sur pupitres: upon maturation completed, the bottles are taken from the piles and strung by the neck in the pupitres, are rotated by hand every day for about 30 days, at the end of which they are performs disgorgement. Alcohol content: 12.5% vol. Pairing: excellent as an aperitif. Multiple combinations able to enhance the acid/sapid characteristics of this wine. A risotto with red radixxhio and Monte Veronese, a risotto with zucchini and taleggio. A fondue of meat or cheese. L’azienda Fongaro nasce nel 1975 e privilegia la coltivazione del vitigno autoctono Durella, tipico della zona dei Monti Lessini, sulle colline fra la provincia di Verona e quella di Vicenza.La Cantina sorge su terreni vulcanici che conferiscono all’uva Durella spiccate proprietà minerali valorizzate poi dal lungo processo di rifermentazione in bottiglia, conosciuto come Metodo Tradizionale Classico. GRAN CUVEE BRUT: spumante da agricoltura biologica, di colore giallo paglierino intenso, sa riflessi oro. Al palato appare di una freshzza decisa e pungente. Ottimo per l'aperitivo.CUVEE BRUT: spuma soffice con perlage fine, elegante e persistente che invoglia immediatamente l'assaggio. Dal gusto vibrante, sfuma verso le note agrumate di pompelmo giallo e mandarino. Ottimo con il sushi.LESSINI DURELLO DOC: profumo a base di frutta matura fusa a dolcezze di pasticceria fresca, confermato dall'assaggio, che lo rivela un vino cremoso, dalla bollicina suadente.Ottimo con i bignè alla crema Chantilly.
