In the glass, the wine has an intense ruby red color. The nose shows a strong aroma, with floral notes and hints of red berry fruit and a spicy finish. The taste is soft and enveloping with tannins that are always present but never invasive. It has a good acidity that makes it pleasant to drink. All the components of the Pian di Nova turn out to be in a good balance that makes it a versatile wine that we will never tire of drinking it.

Packaging: 3 bottles of 0.75 lt Grapes: 25% Sangiovese - 75% Syrah Alcohol content: 13.5% Vol. Vineyard: The vineyards from where the grapes are harvested are all located above 200 meters above sea level and have a density of 4,700 plants per hectare. The soils are mainly clayey with a good presence of skeleton and a small percentage of sand that allows good drainage, avoiding annoying water stagnation. Processing: Upon reaching an optimal ripeness for each type of grape variety that will later be vinified separately from each other, the grapes are harvested manually in 10 kg boxes and after spending a night in a cold room at 5°C, it is de-stemmed. The berries are then selected through an optical viewer that discards unwanted products. The must thus obtained undergoes a 2-day cold maceration at about 10°C in thermo-controlled steel vats, after which fermentation begins. Fermentation: This process takes place at temperatures between 25 and 28 °C and lasts about 10 days. Once the sugars have been transformed into alcohol, the wine obtained in maceration with the skins is kept for at least another 20 days. Vinification: After racking, the wine remains in steel vats for 6 months and then decanted into second and third passage French oak barriques where it is aged for 12 months. At the end of the elevation in wood, it is decanted again in steel vats and it is only at this time that the blend between the two types of vine will be made. After a short decantation and a light filtration, the wine is ready to be bottled. Aging: Once in the bottle it will need another 6 months of aging so that it can best express its potential. Pairings: It goes perfectly with traditional Tuscan dishes but can also be drunk together with spicy oriental cuisine with a strong flavor.
