The “Polissena” has an intense ruby red color. The nose shows an intense aroma, with notes of undergrowth and hints of red berry fruit. The taste is dry, full-bodied, with a pleasant perception of tannins.

Packaging: 3 bottles of 0.75 lt Grapes: 100% Sangiovese Alcohol content: 13.5% Vol. Vineyard: The vineyard from which this wine is born, Politi, has a density of 4,500 plants per hectare. It is the highest of Tenuta Il Borro, at about 350 meters above sea level; the soils are shale and very draining. At the end of August, the plants are thinned out and about 1kg of grapes remains on each. The yield per hectare is 45 quintals, equal to about 30 hl of wine. The grapes are harvested and sorted manually, destemmed, pressed and sent to the vinification vats for natural fall. Fermentation: On the first day of fermentation, the wine is subjected to a slight bleeding of 10-20%, so as to obtain half a liter of wine from each kilogram of grapes. Maceration on the skins takes place for 22 days at a controlled temperature in steel vats at 28°C. Vinification: The wine is then decanted into second-passage Alliers oak barriques, where it remains for 12 months and undergoes malolactic fermentation. After this year, the wine returns to steel vats for about a month, to be then slightly filtered, bottled and subjected to a further 6-month aging in the bottle. Pairings: Tuscan meat specialties, Tuscan croutons, aged cheeses, cold cuts, first and second courses based on game. Particularly recommended with hare, wild boar, Chianina and Cinta Senese.
