“Alessandro Dal Borro” has a deep, intense and dark color, with purple notes. The bouquet immediately shows the complexity of this unique wine. The wine is intense, elegant, rich in notes of black fruits and red fruits, followed by a touch of undergrowth with a finish of spices such as green and black pepper and balsamic. In the mouth, this wine is rich, complex, powerful, balanced with elegant tannins. The finish is long, spicy.

Packaging: 1 bottle of 1.5 lt Magnum Grapes: 100% Syrah Alcohol content: 15% Vol. How it is made: The grapes are harvested manually in small boxes with a maximum weight of 1 kg. After harvesting, the grapes are left to cool up to a temperature of 8° C overnight. The processing of the grapes begins with the first sorting table, where each bunch is checked by the operators and eventually, if not of satisfactory quality, is discarded. After buffing, the berries are checked on the second table of cernila where a careful selection of the same is made, also and above all removing any fragments of stalk. Fermentation: The goal is to ferment only the berries, that is, the skin, the grape seeds and the juice, in the complete absence of stalk fractions. The fermentation takes place in a truncated conical French oak vat and lasts more than 40 days. Vinification: All operations are carried out manually. After fermentation, Alessandro dal Borro is poured into barriques, 75% of which are new and 25% of a year old, barriques made with the best selections of fine-grained French oak; in barriques it also takes place malolallic fermentation, followed by aging on the lees for 6 months; the elevation is completed in barriques for 18 months. Pairings: Appetizers and canapes, tomato pasta, aged cheeses, meat stews and game meat such as deer or wild boar, as well as all baked red meat in general. It goes well with turkey and duck meats. In general, where roast or grilled meat is very common, Syrah is the ideal partner to accompany it.
