After a few years of experimentation, with vinification and sparkling tests of different grape varieties and different blends, the Classic Extra Brut Umani Ronchi Method was released in 2011, followed by, at the end of 2013, the debut of the classic vintage method 2008 La Hoz. Produced with Verdicchio and Chardonnay grapes, it is matured both in steel and in tonneaux, to achieve greater aromatic complexity. The subsequent aging on the lees for 52 months, gives rise to a sparkling wine with a clear, deep, thick and long persistence character.

Packaging: 1 bottle of 0.75 lt Grape: Verdicchio 80% and Chardonnay 20% Production area: Marche The Vineyard: The vineyards, aged between fifteen and thirty, trained with guyot, are located in the hilly belt that goes from 200 to 350 meters above sea level, on the left bank of the Esino valley. The soils, which date back to Plio-Pleistocene formations, are characterized by being very deep, clayey and moderately calcareous. The yield of the vineyards never exceeds 60-70 quintals per hectare. Harvest: Done by hand, with the grapes harvested and transported in crates. It normally takes place in two stages: Chardonnay is harvested in early/mid-August and Verdicchio in the mid/end of the same month. For each vintage, depending on the weather conditions, the grapes are chosen where the right balance between sugar accumulation and acidity level has been maintained. The first must not exceed 15°-16° BABO and the acidity must be around 9-10 gr/lt. Vinification: After a soft pressing, the flower must is cooled rapidly and then decanted in a static way. The alcoholic fermentation of Chardonnay takes place in steel tanks and the subsequent aging takes place in tonneaux for about 10-12 months. Verdicchio is fermented and aged for 10 months in steel tanks. Subsequently, the assembly is carried out between the bases to be sparkling, and then the second fermentation begins, which lasts for two months, at a controlled external temperature. The aging in the bottle, which continues for 50 months, guarantees the unmistakable scent due to contact and autolysis of the yeasts. After disgorgement, the sparkling wine rests further for another 6-8 months before being placed on the market. The residual sugar is 1.7 g\ lt. Serving glass: Flutes with a wider belly and narrow opening, characteristics that allow the oxygenation of the wine and therefore the right development of complex and tertiary aromas of sparkling wines vintage or mature classic method, without compromising for this reason the evolution and appreciation of the perlage. Pairings: Ideal with dishes based on fish, shellfish, raw seafood. Serving temperature: 6-8°C
