Umani Ronchi 1 bottle - “Maximo” Marche white IGT Botrytis Cinerea 2016

It is created in the highest part of the Villa Bianchi estate where, thanks to the very special climatic conditions determined by the alternation between high humidity and drier ventilation, at temperatures rather low, Sauvignon Blanc grapes are affected by Botrytis Cinerea in its most noble form, giving this wine incredibly complex and rare flavors and aromas. Maximo is a unique wine in the regional wine scene.

Packaging: 1 bottle of 0.375 lt Grape: Sauvignon Blanc 100% Production area: Marche, Castelli di Jesi The Vineyard: The vineyard, of about two hectares, is trained with Guyot and has a density of planting of 4273 vines per hectare. Exposed to the north, on the crest of a hill 150 meters above sea level, it is planted on a moderately deep, clayey-silty, calcareous soil with the presence of an alluvial deposit skeleton. The yield per hectare is very low and rarely reaches 30 quintals. Harvest: Carried out by hand, with the grapes harvested and transported in crates, and takes place in at least three steps, from mid-October to December. The selection of the grapes is extremely delicate and aimed at collecting only those bunches, or portions of them, that have reached the right degree of concentration (30-35° BABO) thanks to the attack by of noble molds. Vinification: The grapes are pressed whole by means of a small soft press. After static decantation, the must obtained is fermented on its lees at a temperature of 15°C for a month. Maximo ages for about a year in small stainless steel containers before being bottled. Serving glass: Small glass with large body and narrow opening in order to favor both the development of aromas and their concentration in the nose. Pairings: Meditation wine, perfect with pastries, especially dry ones, and spicy cheeses. Serving temperature: 10-12°C
