"VIN DEL FATTORE" SANGIOVESE GOVERNMENT IGT 2020 - 1 bottle of 0.75 lt
Sangiovese Governo Toscano Igt is an elegant ruby red wine, with pleasant notes of red fruits (plums, blackberries and cherries) and spicy accents. Medium structure and dry, round on the palate with an elegant fruity finish and round tannins.
Grapes: Sangiovese 95% - Ciliegiolo 5%
Harvest period: mid-September for the Ciliegiolo, early October for the Sangiovese.
Method of fermentation: the Sangiovese grapes are harvested by hand in small perforated crates and dried in cold rooms until they lose 15% of their weight. Vinification of Sangiovese at low temperature (max 27°C) with maceration on the skins for 4-6 days, racking and end of fermentation without further contact with the skins. After about 4 weeks of drying, the Ciliegiolo grapes are pressed and, once full fermentation has been reached, the previously vinified Sangiovese is added. Fermentation proceeds until almost total depletion of sugars; the malolactic fermentation is activated naturally at the end of the primary fermentation.
Maturation: in steel for three months with the fine lees.
Refinement: in the bottle, starting from the month of May following the harvest.
Aging potential: to be drunk young, within 2-4 years of the harvest
Pairing: perfect with appetizers based on cured meats, first courses with meat sauces and meat main courses.
Service temperature: 16°C
Ideal glass: a large Bordeaux type goblet.
"ROGGIANO" MORELLINO DI SCANSANO DOCG 2021 - 1 bottle of 0.75 lt
Full ruby red wine, rich in color, enlivened by purple reflections. The olfactory bouquet is characterized by character and pleasantness, breadth and depth, with fruity, floral and spicy notes suffused with hints of undergrowth. The enjoyment of the taste does not lack anything in terms of persistence and balance: the tannins are well present but elegant, subtle, balanced, together with the freshness, by a fruity roundness.
Grapes: Sangiovese 95% - Alicante 5%
Harvest period: end of September
Method of fermentation: grapes harvested at perfect phenolic ripeness and protected with the use of carbonic snow. Hot maceration (35°C) for 12 hours; fermentation follows at controlled temperature (max 27°C). Racking off after 7 days of fermentation with the skins. Aging on the fine lees until the malolactic fermentation takes place (November).
Maturation: in steel for 4 months with the fine lees.
Refinement: in the bottle for at least 3 months.
Aging capacity: classic Morellino di Scansano, good when young but capable of giving its best 2-3 years after the harvest.
Pairing: with savory first courses and second courses of red meat or game. Pappardelle with wild boar ragout.
Serving temperature: 16-18°C
Ideal glass: a large Bordeaux type goblet.
"BENEFIT VINEYARD" MORELLINO DI SCANSANO DOCG 2020 - 1 bottle of 0.75 lt
Full, bright ruby red wine. The nose is followed by hints of roses combined with wild berry jam, the notes of cocoa and undergrowth intertwine with spicy accents and yet a delicate balsamic note on the bottom. On the palate it is round, dry, with a good structure and a character defined by round tannins and a pleasant sapidity in the background. Broad and long finish consistent with the sense of smell.
Grapes: 100% Sangiovese
Harvest period: end of September
Method of fermentation: grapes harvested at perfect phenolic ripeness in the vineyard of the same name. Hot maceration (35°C) for 12 hours; followed by fermentation at controlled temperature (max 29°C) with maceration on the skins. Overall, the fermentation lasts 12 days. Natural malolactic fermentation a few days after racking.
Maturation: in French oak barriques with a capacity of 225 l, partly new, partly second passage, for 6 months.
Refinement: in the bottle for at least 3 months.
Aging capacity: excellent when young, perfect 3-4 years after the harvest.
Pairing: with appetizers based on cured meats and cheeses, first courses with meat sauces, red meat and game.
Serving temperature: 16-18°C
Ideal glass: a large Bordeaux type goblet.
