CHARDONNAY DOC 2020 - 1 bottle of 0.75 lt The
only international grape variety grown. Exclusively vinified in steel, it surprises for its purity and integrity. The altitude of the vineyard is beautifully expressed in its minerality and fragrance. The soft pressing and the work of the cellar make the company style unmistakable, all based on the cleanliness and clarity of the perfumes.
Grape varieties: 100% Chardonnay
Vinification: Thinning in the vineyard and selection during the grape harvest. Collected in 20Kg crates. After soft pressing using an air press, fermentation takes place in steel tanks at a controlled temperature of 10/12° C for 5-7 days and completed at a temperature of 18° C. takes place exclusively in steel tanks.
Aging: Aging takes place exclusively in steel tanks for about a year.
Alcohol content: 13% Vol.
Serving temperature: 14°C
Pairings: first and second courses based on fish, unaged cheeses.

MOSCATO D'ASTI DOCG 2021 - 1 0.75 lt bottle
It comes from the high hills of Castiglione Tinella. Intense nose of peach and white flowers. In the mouth, the bubble is elegant and never overhangs the finish of a typically sweet wine. Fermented and immediately bottled to ensure freshness and drinkability.
Grapes: 100% Moscato
Vinification: The grapes are selected from vineyards located in the municipality of Castiglione Tinella. The plants have an average density of 5,500 plants per hectare of area, and an average age of 35 years. The production is about 85-90qt of grapes/ha. The soil type is mainly calcareous. The collection takes place manually in 25Kg crates. After a soft pressing with the use of an air press, the clarification of the must takes place following a physical principle with the flotation system. Storage takes place in cold rooms and alcoholic fermentation takes place a few weeks before bottling by adding selected yeasts and increasing the temperature up to 12°-14°. The fermentation takes place entirely in an autoclave in order to preserve the natural carbon dioxide. It is interrupted when the wine has reached an alcohol content of 5-5.5%. This fermentation process is stopped by reducing the temperature. There is no malolactic fermentation in order to preserve the acidity, varietal aromas and freshness of the product.
Alcohol content: 5% Vol.
Serving temperature: 12-14° C
Pairings: Dessert, Chinese and Cantonese cuisine, lobster and as an aperitif.

DOLCETTO D'ALBA SUPERIORE DOC 2019 - 1 bottle of 0.75 lt
Produced from a vineyard planted in 1991. Thanks to a magnificent exposure and a slight delay in the harvest operations, the result is a structured wine, with a pleasant concentration and ripe red fruit. Typical notes of almond and a dry finish. Pure expression of the Langhe.
Grape varieties: 100% Dolcetto
Vinification: Thinning in the vineyard and selection during the grape harvest. Collected in 20Kg crates. After destemming-crushing, maceration and alcoholic fermentation takes place on the skin for 8-10 days in steel tanks. Malolactic fermentation follows at a controlled temperature.
Aging: The storage takes place in steel containers only for a period ranging from 9 to 10 months. This is followed by the bottling and storage of three months in the bottle before the sale.
Alcohol content: 13% Vol.
Serving temperature: 16-18° C
Pairings: appetizers, first courses based on fresh pasta

The history of the Viberti Giovanni winery begins when Cavalier Antonio Viberti buys the Good Father's Inn. It was 1923 when Antonio began to produce, in the Good Father's basement, wine for the guests of his Inn. The wines produced see BAROLO as the protagonist, as well as the most important denominations of Langa.
