Winemakers since 1854 in Fleury-la-Rivière, a small town located between Reims and Épernay in the Vallée-de-la-Marne. The Payers are among the twenty-four founders of the Regional Champagne Wine Cooperative in 1962. The small maison is run today by the young Elise. Father and daughter, they work in full respect of nature, practicing reasoned viticulture and turning all their attention to the soil that feeds their vineyard. “Champagne, unlike other wines, improves in the winemaker's cellar and not in the customer's. It is aging on the lees that gives Champagne a unique balance, between aromatic power and freshness. ” Curiosity: the term rivière, is not linked to the presence of rivers in the territory but to the economic past of the village during which winemakers produced red wine in barrels that rolled, like a river, to the Marne and that from here were transported by river to Parisian consumers.
