Pinot Noir is dominant, with a complement of Ghardonnay that gives its freshness to the whole. The high percentage of reserve wines (from 30% to 40%), aged in barrels, gives great regularity and style to this Brut Platine. Malolactic is not carried out. Only Grand Crane and Premier Crane grapes are used there, from the Mountain of Reims, from vineyards grown by Nicolas Maillart himself. A long aging in the cellars, the aging of about three years on the yeasts, the rest for several months after disgorgement allow to improve their development and to detect all the fineness. Due to its balance and natural freshness, this cuvée is weakly dosed (6gr/l). Package: 1 bottle of 0.75 lt Colour: golden with fine and persistent perlage. Bouquet: introduces with a fine apple scent, evolving on ripe fruits and toasted notes. Flavor: A nice fresh, vinous attack reveals a rich champagne backed by a great finesse.

A winemaking tradition dating back to 1753, where ancestors worked the vine in the nearby village of Chamery. There is a document that suggests a much older ancestor, a “vine measure” from 1533, developed by Pierre Maillart, sworn surveyor in Chamery, on behalf of the Abbey of Saint-Nicaise. Today, the ninth generation is in charge with Nicolas, who after studying engineering and oenology, returned in 2003. Thus it perpetuates almost 300 years of history and preserves the philosophy of the house: to express in wines the potential of Champagne terroirs.
