Harvest: The harvest of the grapes is done manually. The bunches are placed in boxes of about 20 kg.
Fermentation: The Passerina grape variety, with a wide aromatic heritage and marked acidity, is particularly suitable for sparkling wine with the Charmat method. From fermentation at controlled temperatures, a very fine wine is born, which allows contact with the lees for more than 90 days, commonly known as Long Charmat. A sparkling wine is obtained with a fine and persistent perlage, creamy and satin, with intoxicating and engaging aromas, which create an expectation that is not disappointed, rather that invites you to drink again.
Color: Bright yellow with silver reflections. Fine and persistent perlage.
Perfume: A successful combination of the soft fruity nuances and fresher floral sensations. Intense, fine, fragrant, with a memory of acacia flowers, pleasant and very elegant, with aromas of white fruit, and notes of cedar.
Taste: Intoxicating aromas of white flowers, delicate notes of pome fruits, lively citrus sensations, accompanied by freshness and flavor, enhanced by the tantalizing petillant, are pleasantly characteristic contrasted by the softness of this wine. Excellent persistence with a pleasant taste-olfactory correspondence.

Dalla fermentazione a temperature controllate, nasce un vino molto fine, che permette il contatto con le fecce per oltre 90 giorni, comunemente detto Charmat lungo.
