PROSECCO BRUT DOC - 1 bottle of 0,75 lt
Light yellow color with thin, creamy and persistent perlage. Bouquet of great intensity with notes of yellow pear combined with aromatic notes of great freshness such as grapefruit and Grenny Smith, freshness and acidity never aggressive, the body is slim and light with excellent flavor that gives the product a great drinkability.
Grapes: Glera 100%
Denomination: Brut DOC
Vinification: Soft pneumatic pressing of only flower must. First fermentation in stainless steel tanks at controlled temperature and subsequent refinement on the lees for 2/3 months.
Spuma: Charmat Method with selected yeasts at constant temperature (13°/14°) with second particularly long fermentation (90 days) in order to obtain a fine and constant perlage.
Alcohol content: 11% vol.
Pairing: Suitable for any occasion, for a sparkling and refined aperitif or to alongside fish dishes, fresh cheeses and white meats. It is a fresh, harmonious and round prosecco ideal presence of any meeting, never obvious in its taste always full and harmonious.

EDDA CRISTINA BIANCO AROMATICO 2019 - 1 0.75 lt bottleComing
from a grape variety of origin from Moravia and Hungary, in honor of the traditions of Hungarian family and ancient possessions. It is an aromatic wine of crystalline yellow color, intense bouquet of lime, apricot and peach with classic scents of white wildflowers such as acacia, honeysuckle and rose. In the mouth it has an intense, clean and persistent taste with excellent minerality that supports the great aromatic complexity.
Grapes: Palava 100% (Moravia origin - Hungary)
Denomination: IGT Venezia Giulia
Harvest: manual on boxes
Plot: Il Bosco
Yield: 80ql/hectare
Vinification: pneumatic pressing soft flower must only with static cold decantation for 24 hours. First fermentation in stainless steel tanks at controlled temperature and aging on the lees for 8 months with frequent bâtonnages. Further maturation in bottle for 3 months.
Alcohol content: 13% vol.

drink: young but has potential for further aging in bottle

MERLOT FRIULI DOC 2018 - 1 bottle of 0,75 lt
Merlot Friuli DOC garnet red color. The bouquet has mainly aromatic notes of marasca cherry and undergrowth fruits. On the palate it has a good structure and complexity, with prevalence of red fruits and currants. It is soft and pleasant, with elegant and silky tannins.

Harvest: by hand

Vinification: Skins in contact with the must, for at least two weeks with pumping over Daily, and temperature controlled délestage. At the end of fermentation, part of the wine is aged in new barriques, for a year, and a part in stainless steel. They are then assembled for further maturation in the bottle.
Pairing: Particularly suitable to accompany cheeses, red meats and game.
Alcohol content: 13.5% vol
Serving temperature: 16-18°C

The Monastero di Aquileia Estate continues the winemaking tradition on territory, with the seventh generation of the Ritter de Záhony family. The entrepreneurial vocation of Guido Federico Rossignoli — son of Claudio Rossignoli and Edda Cristina Ritter de Záhony who transmitted their passion and dedication to their children lands — still allows the direct management of the estate, respecting the oldest family traditions. Working with passion and commitment, Guido Federico, flanked by his sister Sabina, cultivates the values that have always distinguished the personality of the House. The prosperity of these wonderful lands was already sensed by the Romans who founded the city of Aquileia here in 181 BC — now a UNESCO World Heritage Site — and who first began the cultivation of vines following the natural predisposition of the place. It is said that Empress Giulia Augusta, Octavian's wife, appreciated Aquileia's wine so much that it was sent to Rome.
