The commercial name of the "forest honeydew" or more simply "forest honey" identifies a team product among bees and other insects which, by piercing the bark of firs, lindens, chestnut trees ..., make the precious sap called "honeydew" gush out and spread it on the surrounding flowers and leaves. It is dark amber in color, sometimes almost pitch and is presented almost everywhere in a liquid state. The scent is intense, vegetal, fruity, with overcooked jam, green tomatoes, fig jam. In the mouth the taste is full, aromatic, not very sweet compared to nectar honeys, for some it is almost salty, interesting for its aromatic complexity.
