Mirin is a very sweet rice wine. It is used to round off the flavor of fish or seitan dishes: add a few drops during cooking for an absolutely special effect, as you would with wine.
The traditional fermentation of Mirin is a process that takes no less than nine months to complete, according to the passing of the seasons. Only the slow fermentation can give rise to this amber and sweet condiment that adds a touch of perfection even to the simplest dishes.
Packaging: 4 bottles of 250 ml
Ingredients: Calmochi sweet rice, water, rice, koji (Aspergillus oryzae).
How to use: Add in a small amount to the cooking of fish, seaweed, vegetables, preferably together with soy sauce. Or use it as an ingredient in sauces. A cold winter day can be warmed up with a delicious punch-like drink, made by adding Mirin Mikawa to hot Mu tea.
