Obtained with the most recent method that uses purified enzymes to convert cereal starch into simpler sugars. With this method, a malt is obtained that is richer in simple sugars than traditional malts and it is possible to produce malts composed of a single cereal, since there is no need to add barley.
Rice syrup is made by adding purified enzymes to cooked rice. Enzymes break down corn starch molecules into sweet maltose. From the following cooking and filtering, a thick and sweet syrup is obtained.
