Tapioca is a starch that is obtained from the tubers of a tropical plant, the “bitter cassava”. This shrub, native to South America, produces a 30-60 cm long tuber that contains starch, which can be used as cereal flour. With it, in tropical countries, bread is made, using it exactly as it is done with wheat. Tapioca has a great caloric value, practically the same as that of wheat. It is a food composed almost exclusively of carbohydrates (starch), in the percentage of about 88%.

How to use: it is left to swell in the liquid you want to use for the recipe (water, broth or milk) and cook slowly bringing to a boil for about 10 minutes. When cooked in water, tapioca acquires a jelly-like consistency (the grains swell), which is why it is used in soups or as a thickener for creams, puddings and cakes.
Storage: Store in a cool, dry place, away from sources of light and heat. After opening, close the package tightly.
