Corte del Lupo Rosso, rediscovers the traditional red blend of the territory, made of Merlot, Cabernet Franc, Cabernet Sauvignon and Carménère, to enclose within itself the strength of the Wolf and the wisdom of man.

Winemaking: This wine is the result of a careful selection of grapes and a skilful vinification carried out in full compliance with the Ca 'del Bosco Method. The grapes from 8 different vineyards, hand-picked in small boxes, are promptly coded and cooled in cold rooms. Each cluster is selected by expert eyes and hands, and then benefit from our exclusive “cluster spa”. A particular washing and hydromassage system for the bunches, through three soaking tanks and a system for complete drying. Afterwards, each cluster is transported over the maceration vat. With destemming, the berries fall into the vat, from above, by gravity. This eliminates the traditional pumping systems, which are the cause of the breakage of the skins and the unwanted herbaceous notes. During the 2017 Harvest, maceration in contact with the skins lasted 22 days for Merlot and Carménère, 23 days for Cabernet Franc and 21 days for Cabernet Sauvignon. Alcoholic fermentation and maceration were carried out carefully managing temperature and punching down. The pumping over was carried out daily, using a pair of lifting tanks in which the wine, tapped from the bottom of the vat, is transferred by gravity. The wine, brought to high altitude by the flying tanks, is poured into the vat, with a high flow rate, to submerge the “hat”. Nothing more natural and effective to gently extract color and tannins. When racking off, the wines, which are still warm, are decanted into small oak barrels. Only after malolactic fermentation, in the middle of winter, do the different batches be transferred and assembled. This is how the “Corte del Lupo Rosso” was born, which continues its aging in wood and steel for about 18 months. Then the wine is bottled by gravity, in a natural way. Thanks to innovative “long cannula” taps, the wine rises from the bottom of the bottle without laminating, without shaking and does not suffer any oxidative shock. No addition of sulphites at this stage, as a guarantee of integrity and healthiness. Finally, each packaged bottle is uniquely marked, to ensure its traceability.
