Pas Operé, a blend of chardonnay and pinot noir, is the result of a rigorous selection of vineyards, so much so that it comes only from historic plots over the age of 30 and prevailing south-east exposure. The choice of 40 harvest selections aims to define an essential, refined and elegant expression, without compromise. A cuvée, we understand, designed to last and evolve over time, immediately expressive as it is long-lived. An exuberant white foam is accompanied by a perlage of incomparable persistence and finesse, while the aromas are immediately complex, even in their essentiality.
