BRUT MILLESIMATO D'ANTAN - 1 bottle of 0.75 lt
This vintage sparkling wine Riserva D'Antan is produced using slow and traditional artisan processing methods: it offers a unmistakable intensity and uniqueness of sensations.
With the long aging in the bottle, of about 10 years; in contact with native yeasts selected by us, a wine is obtained that does not seem to find age limits and that discovers over time a great and always great faithful ally.
A product in which the surprising freshness is accompanied by the aromas of honey, spices, dried fruit and a distant memory of chocolate, in a continuous growing of harmonies. A rare wine, designed for connoisseurs, the result of a particular and happy moment of nature and an infinite and patient work of man.
Grape varieties: 100% Cortese
Vinification: classic fermentation in bottle, with great aging, aging on the lees for about ten years.
Serving temperature: 8° C
Pairings: ideal as an aperitif and for important lunches, very suitable for after lunch and for “meditation”.

“SOLDATI D'ANTAN” BLANC DE BLANC - 1 bottle of 0.75 lt
Sparkling wine produced from Cortese grapes from vineyards located in the DOCG Gavi area, lying on mainly clayey soil harvested at calibrated ripeness for the intended destination and vinified in an inert atmosphere with cooling the grapes with carbon snow to obtain an already fresh must from soft pressing, to be sent well decanted at the first fermentation that takes place at a further controlled temperature. In the following spring, after a few months of aging in stainless steel tanks, we proceed to the draft for the fermentation. The close contact of wine and yeast lasts about 3 years. Once or more times a year, for each bottle, the result of the second fermentation is suspended for a perfect realization of aromas that, without any addition correction, allows to obtain the Pas-Dose-Nature.
Characteristic is the refined, elegant and delicate taste, slightly savory.
Classification: Quality Sparkling Wine (V.S.Q.) Classic Method N.V.;
Grape Varietals: Cortese Bianca for no less than 85% or up to 100% depending on the vintage;
Appearance: light white wine with green reflections. In the patented D'Antan white bottle, its beauty and brilliance stands out best:
Perfumes: essentially fresh and young, evolving with the presence of oxygen in the glass;
Taste: delicately citrine, even savory, absolutely a fresh and captivating glass that invites you to renew the taste. You can find the nuances from grapefruit to mandarin;
Alcohol content: depending on the vintage, usually around 12% Vol.
Serving temperature: less than 8° C
Pairings: multiple, from aperitif to the whole meal and even later from meditation, glasses that do not weigh and invite you to continue.

With the long aging in the bottle, of about 10 years, in contact with native yeasts selected by us, a wine is obtained that does not seem to find age limits and that discovers over time a great and always faithful ally.

The La Scolca® estate was purchased between 1917 and 1919 by the great-grandfather of the current owner Giorgio Soldati, who now runs the company together with his daughter Chiara Soldati, fifth generation with a look at the third millennium. The past and the future coexist in this company that best combines the naturalness of those who have always lived in this world with the speed of those who look ahead with the foresight of brave captains: never as in the case of the Soldati family do names have a symbolic meaning. The name of the plot derived from the ancient place name “Sfurca” or “Looking Away” and the farmhouse that stood there had in the past been precisely a lookout post. The surname fully reflects the proud and tenacious character of the owners and their wines. Giorgio has proved to be a very valid and whimsical innovative interpreter: his is the creation of successful wines and sparkling wines without ever betraying loyalty to the land of Gavi and to the courteous grape variety. But the most difficult task he took on, together with the family, was to maintain the leadership gained by the company over the years, further strengthening the image and the fame of Scolca with an all-Piedmontese will and the philosophy of the highest possible quality.
