A perfectly matured VSOP in which the terroir of the Great Champagne is expressed. Acacia color with coppery reflections. Expressive and evolutionary bouquet, aromas of vanilla, apple tart, cinnamon sticks. Excellent balance in the mouth between the freshness of the fruity and the notes of exotic wood. Excellent persistence finish, the finish is sensual and velvety.

Grape varieties: 93% Ugni Blanc (Trebbiano), 7% Colombard
Vinification: mechanical harvest, pressing with horizontal press. Fermentation in steel tanks. The wine obtained after fermentation has an alcohol content of 8-9°, without any sulfur additives.
Distillation: “charentais” method called double heating. From the first distillation of the wine, accompanied by fine lees, we obtain an alcoholic liquid called “brouillis” (fractions) which has an alcohol content of about 30° and represents 1/3 of the initial volume. Subsequently the 'brouillis' are distilled, constituting 'the bonne chauffe' (the good distillation) of which the heart is preserved, with an alcohol content that is close to 70°.
After distillation, the spirit matured for a year in new oak barrels, with wood from the forests of Tronçais and Limousin, for maximum extraction of tannins. Later it was racked into older wooden drums called 'roux' in which it aged 2 to 4 years and acquired the amber color, aromas and character of 'rancio'. These characteristics are due to the duration of aging, the temperature and humidity of the cellar. Evaporation called 'part of angels' represents approximately 2% per year.
Aging: aged from 5 to 12 years.
Alcohol content: 40% Vol.

On September 11, 1897, an ancestor of the current owner Patrick Drouet, deserved a diploma from the “Grand Prix d'Eau de Vie” at the Brussels International Exhibition. Since then, four generations have followed one another, and the Drouet company has expanded to the size of 39 hectares of vineyard, with its own distillery and aging cellar.
