Shelf life: 2 years Extraction method: Continuous two-phase cold cycle. Appearance: Green, veiled for natural decantation. Bouquet: Full-bodied with a pronounced note of artichoke. Taste / Aroma: Full-bodied, with a very balanced spicy bitterness, with notes of artichoke and oregano. All the processing phases are meticulously followed. Harvesting is done by hand as the olive is very delicate. Thanks to this great attention in harvesting the olives arrive perfectly intact and ready for pressing. They are processed within 6 hours of harvesting to best enhance their flavor.
