Il Pinot Nero: vitigno per pochi eletti.
Ottenuto da uve pinot nero 100%, si utilizza solo il primo fiore della pigiatura. Si fa una brevissima macerazione di poche ore per ottenere il colore desiderato, in seguito una parte del vino di base fermenta in barrique.
Il vino evolve per 54 mesi a contatto con i lieviti prima della sboccatura.
Travolgente, potente e persistente. E` un vino indomito che racchiude in se´ grande energia e al contempo manifesta un’intensa piacevolezza.

Affinamento sui lieviti: 54 mesi Caratteristiche organolettiche: Classiche pagliuzze dorate, il vitigno dona una materia colorante ricca; l’olfatto esplode letteralmente, l’intensita` e` inebriante, dapprima i fiori freschi ed essiccati, la ginestra, il fieno, la piccantezza delle spezie, pepe e coriandolo, anice e liquirizia, il finocchietto si fonde con la susina e la pesca gialla matura, chiudono il malto d’orzo e la nocciola tostata. In bocca ha potenza, ricchezza e lunghezza impressionanti, ha la classe e la seta tipiche del vitigno, anche nelle vinificazioni in rosso; la lunga scia lascia una volta di piu` le note tostate e delicatamente affumicate. Abbinamenti: In un pasto puo` tranquillamente sostenere il piatto principale, carni bianche con salse ed intingoli, tranci di pesce con sughi e aromatizzazioni nobili, oppure primi piatti ricchi di condimento. Pappardelle con sugo di cinghiale. Starne, pernici e beccacce tartufate.
