The Madonie farmers know this well, who from the ash trees in the mountains between Castelbuono and Pollina, from July to September wisely extract the sap by practicing precise engravings (“Ntacche”). ) on the bark of trees. The secreted liquid solidifies rapidly under the action of the sun, giving life to small white stalactites (the “cannoli”) rich in extraordinary properties: it is Manna.
