Vinegar, like the oil to which it is often accompanied, must season without imposition: the right balance between the mixture of seasonings serves to enhance the taste of the dishes it matches. The vinegar we selected comes from Venetian cabernet red wine, produced with an ancient method that, after the acetification process, involves aging in oak barrels.
