Introduced after the discovery of America, it has become a typical legume in Tuscany and today it is widespread everywhere. With an elongated shape and a very light color, it is rich in starches, fibers and lecithin that prevents cholesterol. Versatile in terms of texture and soft flavor, it is used for soups and soups, creams with cod and shrimp or simple with salt, pepper and extra virgin olive oil, also to try “bird”.
Before cooking, it is necessary to soak for 8-12 hours.
