Concentrated ruby red wine, the nose offers great pleasure with the sweet spicy and fruity notes of cherry, berries, cinnamon and vanilla. Full, dry palate, with powerful but elegant tannins, balanced by alcoholic warmth and softness. Balanced and long-lasting taste with fruity and spicy returns.

Packaging: 3 bottles of 0.75 lt Grapes: 100% Sangiovese Training system: spurred cordon Planting density: 3500 vines/hectare Type of soil: silty, clayey sandstone under 1 m of depth. Altitude: 300 meters above sea level. Age of the vineyards: single vineyard over 30 years of age. Harvest time: first week of October. Fermentation mode: harvested at perfect phenolic ripeness. The grapes are macerated at 35°C for 12 hours; fermentation follows at a controlled temperature (max 29°C) and post-fermentation maceration on the skins for a total of 12 days from the beginning of fermentation. malolactic fermentation occurs naturally a few days after racking. Aging: elevation in 225 l French oak barriques (60% first pass, 40% second) for 15 months; a short passage in steel follows. Aging: 18 months in the bottle. Ageing capacity: Sycamore is a large-structured Morellino, to be drunk preferably 5-10 years after the harvest. Pairing: with roasts and braised meats, succulent meat dishes, aged cheeses. Serving temperature: 18°C Ideal glass: a large Bordeaux type glass.
