The Verdicchio Casal di Serra by Umani Ronchi was produced from 100% Verdicchio grapes. The original vineyards extend on the opposite banks of the Esino Valley, on clayey and medium-calcareous soils, at an altitude between 200 and 350 meters above sea level. After the manual harvest, the bunches were transported to the cellar to be vinified. After soft pressing, part of the free-run must (i.e. the product of the first pressing) was subjected to film maceration - carried out at room temperature - which allows for greater extraction of the typical aromas of the vine also known as varietal or primary. The alcoholic fermentation took place in stainless steel at a controlled temperature of 16-18°C for a period of 10-15 days. The refinement took place for 5 months in steel in contact with the yeasts and for a few more months in the bottle.

The Verdicchio dei Castelli di Jesi Classico Superiore Casal di Serra by Umani Ronchi presents a straw yellow color with greenish reflections. On the nose it expresses aromas of yellow and white pulp fruit combined with timid hints of spring flowers. The taste is fresh and pleasant, enhanced by a clear minerality that invites a second sip. At the table it pairs well with fresh and semi-mature cheeses as well as vegetarian dishes and delicious seafood recipes.
