La Hoz Rosè is a Classic Method made only with Montepulciano grapes from the Conero area. Here Umani Ronchi can count on about 70 hectares of property and has the opportunity to choose between the different vineyards depending on the trend of each individual vintage, identifying the most suitable grapes for this product. Using for the first time the red berried grapes of the native Marche vines, La Hoz Rosè represents a further proposal by Umani Ronchi in terms of winemaking and sparkling wine, which is it combines the Classic Method with Verdicchio and Chardonnay grapes.

Packaging: 1 bottle of 0.75 lt Production area: Marche The Vineyard: The vineyards are located in the municipality of Osimo (AN) and are exposed to the south-east and south-west, on a hill that is about 100-150 meters above sea level. The soil, which dates back to formations of the marine Plio-Pleistocene, is very deep, loamy clayey, very calcareous. The yield, which is contained through very short pruning and targeted thinning, can vary according to the seasons, from 80 to 90 quintals per hectare. Harvest: Carried out by hand, with the grapes harvested and transported in boxes; a process that normally takes place between late August and early September. For each vintage, the grapes are selected, depending on the climatic trend, where the right balance between sugar accumulation and acidity level has been maintained. The first must not exceed 15°-16° BABO and the acidity must be around 8-9 gr/lt. Vinification: After destemming, the grapes carry out a very short cold maceration and then proceed with all the stages of vinification and aging in steel. The aging on the lees, which continues for 30 months, guarantees the unmistakable scent due to contact and autolysis of the yeasts. After disgorgement, the sparkling wine rests further for another 6 months before being placed on the market. The residual sugar is equal to 2.1 g\ lt. Serving glass: Flutes with a wider belly and narrow opening, characteristics that allow the oxygenation of the wine and therefore the right development of complex and tertiary aromas of sparkling wines vintage or mature classic method, without compromising for this reason the evolution and appreciation of the perlage. Pairings: Ideal with fish dishes in sauce, fatty fish, cold cuts and white meats. Serving temperature: 6-8°C
