Come gli altri sughi, quello con le olive Tonda Iblea e Nocellara dell’Etna è naturalmente dolce e corposo perché preparato solo con polpa di pomodoro maturato al sole di Sicilia e senza l'aggiunta di aromatizzanti o conservanti. Il soffritto d'olio d'oliva viene preparato a temperature non troppo elevate e con tempi lunghi per permettere alla dolcezza della cipolla di equilibrare naturalmente l'acidità del pomodoro ed esaltare quindi il gusto delle olive.
