Cavit Pinot Grigio Trentino Superiore Doc Rulendis 2020 - Cavit 0.75 lt

Cavit's Pinot Grigio Rulendis was obtained from 100% Pinot Grigio grapes coming from unconventional areas with respect to the cultivation of the vine which usually prefers hilly or foothill areas. The reference vineyards exposed to the South and South-East extend in fact at an altitude between 600 and 650 meters above sea level on soils of glacial origin that are quite deep and rich in skeleton. The harvest was carried out by hand at the end of September with different times for each vineyard depending on the ripening period. The white vinification began with soft whole bunch pressing. The fermentation of the must took place thanks to selected yeasts at a controlled temperature of 20°C. The refinement lasted 12 months in stainless steel plus a short period in the bottle.
PINOT GRIGIO TRENTINO SUPERIORE RULENDIS CAVIT: THE TASTING
Cavit's Pinot Girgio Rulendis is straw yellow in color with golden reflections. On the nose it offers aromas of yellow pulp fruit and white flowers followed by hints of alpine herbs and flint. On the palate it is fresh and intensely mineral with a persistent fruity and citrus taste. At the table it goes well with cheeses and vegetarian dishes as well as tasty seafood preparations. Try it with risotto with perch.
