The Chianti Classico Pèppoli by Antinori was born from Sangiovese (90%), Merlot and Syrah (10%) grapes vinified separately in stainless steel. The original vineyards are located within the Tenuta Pèppoli which extends for 100 hectares (of which 50 are under vineyards), 5 kilometers from the prestigious Tenuta Tignanello, in the heart of the Chianti Classico area. The alcoholic fermentation took place at a temperature between 26°C and 28°C with a maceration on the skins of approximately 7 days for the Sangiovese and 12-15 days for the other varieties. After blending, carried out after malolactic fermentation, the wine rested for approximately 9 months in large Slavonian oak barrels and, for a small part, in barriques and stainless steel tanks.
CHIANTI CLASSICO PÈPPOLI ANTINORI: TASTING
The Chianti Classico Pèppoli by Antinori shines in the glass with a ruby red color with purple reflections. On the nose it expresses floral hints of violet and pulpy aromas of morello cherry and red fruit combined with light balsamic notes and sweet spices. The sip is soft, enhanced by a smooth tannic texture that combines with a pleasant flavor and a docile trail of freshness. At the table it goes well with cured meats and semi-mature cheeses as well as tasty dishes based on red meat and game.
