Confezione di Filetti di Alici sotto sale da 250 gr, pescate rigorosamente nel Golfo di Salerno.
Nata nel medioevo, la conservazione delle alici sotto sale rappresenta ancora oggi il modo migliore per conservare questo prodotto, pescato in primavera, per tutto l’inverno. Le alici, pescate esclusivamente nel Golfo di Salerno da Marzo a Luglio, selezionate, decapitate ed eviscerate, vengono salate e collocate a strati, con il classico metodo testa-coda, in tipici contenitori di legno detti “terzigni”. Il terzigno viene chiuso con un coperchio chiamato “tompagno” sul quale viene collocato un peso per pressare le alici. I terzigni vengono conservati per 6 mesi in un luogo fresco e asciutto. Dopo questo periodo le alici sono pronte per essere consumate e conservate fino alla primavera successive.
