Parpaccio Mengazzoli is a new ingredient in Italian cuisine, a solid vinegar, to be grated and transformed into the interpretations of chefs and cooking enthusiasts; a new culture of sublimation liquid mass in solid and then again in something else. We suggest melting it and then reforming it into something different, cutting it in layers to obtain transparency, dry it to increase its crisp density, even until it becomes powder, crystallize it, deform it into refined shapes, or simply grate it into infinite sheets. Ideal for an aperitif on canapes, oysters, salads, foie gras, fresh and aged cheeses, fruit, desserts, ice creams and many other recipes. Excellent grated on pasta dishes, risotto and pizza.

Vinegar in Mantua is a tradition that is lost over time and that was handed down from father to son in the families of vinegar farms. The turning point of this fantastic tradition is 1962. At the time, Giorgio Mengazzoli had a dream: to take over the reins of Mantua's centuries-old craft tradition and make it known and appreciated outside the city limits, in Italy and around the world . It is so, simply and spontaneously like all the best things, that the Mengazzoli Vinegar Factory has embarked on a path of growth that it is proud of. Since then, many years have passed, Giorgio was joined by his sons Elda and Cesare and production has diversified going from wine vinegars to apple vinegars, from Balsamic Creams to Mostagri, from salts to flavored vinegars but the passion of those who work there consistently and the careful selection of raw materials have remained the same and have grown together with the company and those who he believes in it. New technologies have allowed us to remain attentive to finding the best raw materials such as in an artisanal, healthy and controlled production such as that of the company's early days but to increase the quantity and range of distribution of Mengazzoli brand products. Today you can therefore find this piece of noble Italian tradition in Europe, Asia, Africa, America and Oceania.
But the dream has not yet stopped and continues to grow with the Vinegar Mill.
