The bottarga has a high protein value, is rich in Omega3, has a yellow and amber color and a firm but delicate flavor. It is perfect grated on first courses or sprinkled on hot croutons veiled with butter. Refined and versatile, cut into thin slices goes well with fresh vegetables for delicious salads.
On the palate, its flavor is firm, enveloping and savory, with a clear reminder of the scent of the sea.
