Personality. It is the first wine to bear the signature of the author, Maurizio Zanella, to proudly celebrate the passion of the man who founded Ca 'del Bosco. A wine that embodies the realization of the perfect synthesis between the territory and its way of being. A great wine that is certainly among the jewels that contributed to the “Italian wine renaissance”. Cabernet Sauvignon, Merlot and Cabernet Franc, selected from the best vineyards of the company, expertly vinified and aged in small oak barrels guarantee a granite wine, powerful and harmonious at the same time, capable of maturing for decades.
Packaging: 1 bottle of 0.75 lt
Grape varieties: Cabernet Sauvignon 50%, Merlot 25%, Cabernet Franc 25%.
Vinification: Maurizio Zanella is obtained by vinifying separately the Cabernet Sauvignon, Merlot and Cabernet Franc grapes from the best vineyards of Ca 'del Bosco. The grapes, harvested by hand in small boxes, are promptly sorted and cooled. Each bunch is selected by expert eyes and hands, and then benefit from exclusive “spas of the berries”, a particular washing and hydromassage system of the bunches, through three soaking tanks and a drying system. Afterwards, each cluster is transported over the maceration vat. With destemming, the berries fall into the vat, from above, by gravity. This eliminates the traditional pumping systems, which are the cause of the breakage of the skins and the unwanted herbaceous notes. Alcoholic fermentation and maceration were carried out for an average of 21 days, carefully managing temperature and punching down. The pumping over was carried out daily, using a pair of lifting tanks in which the wine, tapped from the bottom of the vat, is transferred by gravity. The wine, brought to high altitude by the flying tanks, is poured into the vat, with a high flow rate, to submerge the “hat”. Nothing more natural and effective to gently extract color and tannins. When racking off, the still warm wines are decanted into small oak barrels, 70% new, obtained from selected woods, aged for at least 3 years. Only after malolactic fermentation, in the middle of winter, do the different batches be transferred and assembled. This is how Maurizio Zanella was born, which continues its aging in wood for about 13 months. Then the different batches are assembled and the wine is bottled by gravity, in a natural way. Thanks to innovative filling systems, the wine does not suffer oxidative shock, beating and further addition of sulphites. Its integrity and healthiness are guaranteed. Finally, each packaged bottle is uniquely marked, to ensure its traceability.
